Chef Makoto Okuwa, who trained under legendary sushi masters, is opening his newest restaurant, Makoto Vail, at the Grand Hyatt Vail.
The menu features traditional Japanese cooking “combined with his own innovative style” — such as his famed tuna crispy rice with serrano chili and rock shrimp with kochujang and endive — and a beverage program created by Eduardo Dingler.
The 110-seat restaurant with interiors that complement Vail’s natural setting also features a Suntory highball machine and an in-depth sake menu and boasts a collection of more than 60 Japanese whiskeys.
